Good morning amazing readers!
Nothing beats this routine of waking up first in the morning and with your nose catching a delicious smell of botokoin (that is how we call it in ewe my native dialect) also called beignets in french or fritter in english,this delicious dish is found in many cultures and you will notice a difference in shape and taste.
In TOGO it can be served as breakfast with a side of AKLUI ZOGBON also called corn porridge or as PM (afternoon) snack.
We just love it!
I remember when i was a kid before going to school i used to buy botokoin and corn porridge and i was eating them in a big rush,i eat them hot,well of course without burning my entire oesophagus.
The next thing you know is you sweating like if you just did a marathon.
But let’s go back to the subject for a moment so you can found out how we cook it.
I picked up some brands that works for me and you can find them anywhere.
- 1 and 1/2 cup of lukewarm water (~ 96 degrees Fahrenheit or 36 degrees celsius)
- 1 package of instant yeast with dough enhancers RED STAR PLATINUM
- 2 and 1/2 cup of all purpose unbleached flour GOLD MEDAL
- 2 and 1/2 tsps of baking powder CLABBER GIRL
- 1 tsp of salt MORTON IODIZED SALT
- 1/2 cup of sugar C&H ORGANIC SUGAR
- oil for frying KIRKLAND CANOLA OIL
In a large bowl with 1 and 1/2 cup of lukewarm water and 1 tsp of sugar empty the content of instant yeast ,stir,cover with a towel and let the yeast activate for 5 min.
NOTE:you can leave out the 1 tsp of sugar here but i just do it this way it is my preference,but you don’t have too.
Now add flour baking powder salt and sugar to the mixture
beat on low for 2 min with an electric mixer or a whisk and let the batter rise for 30 min at least.
30 min later you have this
Heat oil on medium low in a pan until it is hot enough to deep fry the botokoin batter (~190 degrees fahrenheint) and add one at a time a scoop and deep fry until golden brown
VOILA! You have this delicious fluffy inside crispy outside texture
